Losing weight is really just about calories in vs calories out. So unless you find a way to reduce the calories you're taking in (eating) or increase the calories you're burning (exercising), you won't lose weight. Pound for pound, most vegetables have less calories than meat. So it's a good start. But you truly have to reduce your calories. It's all about calories in vs calories out. But - you will improve your health if only because more vegetables means less fat going into your body, which means less fat coating your arteries. So you'll have better blood flow and a better heart.
